The start of the school year is always crazy busy! With football games, tutoring, soccer practices, and everything in between, I need meals that we can grab and go. This year, I’m getting ahead of the game by meal prepping to keep things organized. These 4 easy recipes are lifesavers! They’re quick to make and perfect for breakfast, lunch, or dinner!

Mini Breakfast Casseroles

This breakfast casserole is a family favorite, but this time, I decided to switch it up and turn them into mini breakfast casserole cups. Here’s the recipe!

Ingredients

1 tube breakfast sausage
12 eggs
1 cup sour cream (light or regular)
1/4 cup milk
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/2 onion, diced
1/2 green bell pepper, diced
1/2 red bell pepper, diced
2 cups shredded cheddar cheese

Instructions

Step 1: Preheat the oven to 350°F and spray a muffin tin with cooking spray.
Step 2: Cook the sausage, bell peppers, and onion in a skillet until browned.
Step 3: In a large bowl, mix the eggs, sour cream, milk, cheese, salt, and pepper. Add in the cooked sausage and veggies.
Step 4: Pour the mixture into the muffin tin and bake for 35-50 minutes, or until the edges are set and the center is just a little jiggly.

Homemade Ham and Cheese Hot Pockets

We used to spend way too much on store-bought hot pockets, but once I figured out how to make these at home, I never looked back! The kids love them, and they’re done in less than 15 minutes.

Ingredients

1 tube Pillsbury pizza crust
Sliced ham
Sandwich cheese

Instructions

Step 1: Preheat your oven to 425°F and lightly spray a baking sheet with non-stick spray.
Step 2: Roll out the pizza dough and cut it into 8 even rectangles.
Step 3: Cut 4 slices of ham and cheese in half. Place the ham and cheese on one side of each rectangle, then fold the dough over.
Step 4: Seal the edges with a fork.
Step 5: Pop them in the oven for 10-12 minutes, or until they’re golden brown.

Homemade Uncrustables

PB&J sandwiches are always a hit with my kids, but turning them into Uncrustables takes them to the next level! I found this amazing tool that transforms any PB&J into a homemade Uncrustable. Here’s how I make them!

Ingredients

Sandwich bread
Peanut butter
Apple jelly (or your favorite jelly)

Instructions

Step 1: Grab your sandwich bread, peanut butter, and jelly.
Step 2: Make your PB&J as usual.
Step 3: Use the sandwich cutter to press down in the center of the sandwich.
Step 4: Remove the crust (save the leftovers for croutons or French toast bites!).
Step 5: Ta-da! You’ve got a homemade Uncrustable! Eat it right away, pack it for lunch, or freeze it for later.

Baked Mac and Cheese Bites

Ingredients

1 box macaroni and cheese
1/2 cup half and half or milk
2 tbsp butter
1/2 tsp salt
1/2 tsp garlic powder
4 oz cream cheese, softened
1.5 cups white cheddar cheese, shredded
1 egg
1/4 cup panko or bread crumbs

Instructions

Step 1: Preheat the oven to 375°F and spray a mini muffin pan.
Step 2: Cook the macaroni and cheese according to the box, drain the noodles, and set them aside.
Step 3: On low heat, melt the butter and stir in the half and half, and cheese packet from the box.
Step 4: Add in the cream cheese, shredded cheese, salt, and garlic powder. Keep stirring on low heat until everything’s combined.
Step 5: Stir in the cooked macaroni and egg.
Step 6: Scoop the mac and cheese mixture into the mini muffin pan and top with bread crumbs.
Step 7: Bake for 15-18 minutes, or until they’re golden brown around the edges.
