The more I meal prep for my family, the easier it gets! It’s become a key part of my weekly routine, helping our days run so smoothly. This is especially true on those busy days when we have back-to-back sports practices or need to get to school earlier than usual. As a mom of five, I’m always looking for ways to stay ahead. These six recipes are total time-savers and delicious!


Sausage Breakfast Sandwiches

One thing I know my kids will always enjoy is breakfast, and sausage breakfast sandwiches are a hit! On weekends, I can easily whip them up using my dual breakfast sandwich maker. But on those early school mornings, it’s nice to have these homemade sandwiches prepped and ready to go.

Ingredients

Precooked sausage patties
Eggs
American cheese slices
English muffins

Instructions

Step 1: Preheat your oven to 350°F. Grab a sheet pan and spray it with cooking oil. Place 6 mason jar lids evenly on the sheet.

Step 2: Crack an egg into each lid, scramble with a fork, and season with salt and pepper. Bake for 12-15 minutes or until fully cooked.

Step 3: Microwave 6 sausage patties for 3 minutes.

Step 4: Slice the English muffins in half. Assemble the sandwiches in this order: bottom of the muffin, sausage patty, egg, cheese, and top of the muffin.


I wrap each sandwich individually in foil and place them in a gallon-size reusable bag. In the mornings, just pop them in the microwave for 2 minutes, and breakfast is ready!


On-the-go Breakfast Smoothies

Getting my kids to eat more fruits can be tricky, so I had to get creative! I found these disposable popsicle mold bags and knew exactly what to do.

Ingredients

2 cups strawberries
1 cup blueberries
2 cups Greek yogurt
1/4 cup peanut butter
1 cup spinach

Instructions

Step 1: Add the strawberries, blueberries, Greek yogurt, peanut butter, and spinach to a blender and blend until smooth.

Step 2: Pour the smoothie mixture into the popsicle bags and seal.

Step 3: Freeze until ready to eat.


BBQ Chicken Cups

These BBQ chicken cups are not only delicious but super easy to make. They’re perfect for packing in the kids’ school lunches. I usually pack 2-3 per child, and they’re all set!

Ingredients

1 can of Pillsbury biscuits
1 rotisserie chicken
BBQ sauce
Shredded cheese

Instructions

Step 1: Preheat the oven to 350°F. Shred the rotisserie chicken and mix with BBQ sauce in a bowl.

Step 2: Tear each biscuit in half, flatten, and press into a muffin tin.

Step 3: Stuff each biscuit cup with the BBQ chicken mixture and top with cheese. Bake for 15-20 minutes or until golden brown.


Veggie Snacks with Homemade Ranch

This one’s more for me than for the kids! I love snacking on veggies, but if they aren’t prepped, I won’t reach for them. I stocked up my container with veggies and whipped up a healthy ranch dip to go along.

Ingredients

Snap peas
Carrots
Broccoli
Cherry tomatoes
Cottage cheese
Ranch seasoning packet

Instructions

Step 1: Add the snap peas, carrots, broccoli, and cherry tomatoes to your container.

Step 2: In a small bowl, mix 1 cup of cottage cheese with the ranch seasoning.


Sheet Pan Sausage with Potatoes, Broccoli, and Corn

Meal prepping dinners is my favorite because it means I get a night off from cooking! This sheet pan recipe is a hit with my kids, and I’m always happy to have it prepped in advance.

Ingredients

1 pound chopped potatoes
2 tablespoons olive oil
2 teaspoons Italian seasoning
1 teaspoon salt
1 teaspoon black pepper
4 smoked sausage links
2 cups broccoli florets
1 cup corn

Instructions

Step 1: Preheat the oven to 425°F and spray a baking sheet with oil.

Step 2: Chop the potatoes into 3/4-inch pieces. Toss with olive oil, Italian seasoning, salt, and pepper, then spread on the baking sheet. Roast for 10 minutes.

Step 3: While the potatoes are roasting, slice the sausages into 1-inch pieces.

Step 4: After 10 minutes, remove the potatoes, add the sausage, and roast for another 30-40 minutes.

Step 5: Remove the pan again, add microwaved broccoli and corn, and roast for another 10 minutes.


Chicken Bacon Ranch Tater Tot Casserole

As I prepped this casserole, I decided we’d have it for dinner that same night! It’s a tasty meal my kids love, but you can also freeze it and enjoy it later.

Ingredients

1 rotisserie chicken
Bacon
Cream of chicken soup
Milk
Sour cream
Ranch seasoning
Shredded cheddar cheese
Frozen tater tots

Instructions

Step 1: Preheat the oven to 350°F and grease a 9×13 baking dish with cooking spray.

Step 2: Shred the rotisserie chicken and place it in a bowl. Air fry the bacon, chop it, and add to the chicken.

Step 3: Add cream of chicken soup, milk, sour cream, shredded cheese, and ranch seasoning to the bowl. Stir to combine.

Step 4: Spread the chicken mixture evenly in the baking dish, top with frozen tater tots, and bake for 40 minutes or until golden brown.
