Whenever I need something easy and quick for dinner, this BBQ Chicken Nacho meal is my go-to recipe that I know the kids will devour! What I love most about this meal is how quickly I can make it. I can start and have it plated in less than an hour, making it perfect for when we’re in between sports practices or other evening activities.
This recipe is also perfect for my large family of 7! With other recipes, I sometimes need to double the ingredients to make enough or end up with too many leftovers. But what I love about this recipe is that it makes just the right amount, so there’s no food left over and everyone gets more than enough servings. Here’s how I make these tasty, kid-approved nachos:
Ingredients
1 Bag of Tortilla Chips
2 Cups Cooked Shredded Chicken (approx. 3 chicken breasts)
⅓ Cup Chopped Red Onions
1 Chopped Green Bell Pepper
½ Cup Chopped Tomatoes
¼ Cup Chopped Cilantro
1 Cup BBQ Sauce
½ Teaspoon Garlic Powder
¼ Teaspoon Cayenne Pepper (optional)
1 Cup Shredded Colby Jack Cheese
1 Jar of Tostitos Queso
Instructions
Step 1: Preheat your oven to 350°F.
Step 2: While your oven is warming up, cook 3 chicken breasts however you like best. Grill them, bake them, or even pan-sear them, whatever best suits your taste!
Step 3: Dice up your onion and bell peppers. Heat a splash of cooking oil in a skillet and cook the veggies until they’re golden brown.
Step 4: Shred your cooked chicken and put it into a mixing bowl.
Step 5: In the bowl, season the chicken with garlic powder, cayenne pepper, and any of your favorite spices. Then, add 1 cup of BBQ sauce, the cooked bell peppers, onions, and mix it all together until well combined.
Step 6: Grab an 18×26 sheet pan and spread out a bag of tortilla chips evenly across it. Layer the chicken mixture and shredded cheese on top of the chips, making sure to cover as much as possible.
Step 7: Pop the sheet pan into the oven at 350°F for about 10 minutes, or until the cheese is melted and bubbly.
Step 8: Take the pan out of the oven and drizzle the jar of queso over everything. Put it back in the oven for a few more minutes until everything is lightly toasted and golden.
Step 9: Once your nachos are perfectly toasted, take them out of the oven and top them with a BBQ drizzle, fresh cilantro, diced tomatoes, and onions.
Step 10: Pile the nachos onto a plate and dig in! Enjoy your delicious, homemade BBQ nachos!
