I’ve really been enjoying cooking dinner every night for my family. It’s become a great family bonding time, and I look forward to it every day. The kids love to help me get our meals together, especially my little chef Calvin!

Earlier this year, we made it a goal to stop ordering takeout so often. Not only will that help us save money, but it will also help us manage healthier eating habits. I’ve been trying out many new recipes and adapting them to what I know my family will enjoy. This sheet pan chicken quesadilla recipe was not only very nutritious but also a team cooking effort! The kids ate it all up, and we were able to have fun while making it. Here’s how we did it!

Ingredients

  •  8 Large Flour Tortillas
  • 3 Large Chicken Breasts
  • 1 Can Black Beans
  • 1 Cup Corn, Canned or Frozen
  • 1/2 Green Bell Pepper
  • 1/2 Red Bell Pepper
  • 1 Onion
  • 1/4 tsp Black Pepper
  • 1 tsp Seasoned Salt
  • 1 tsp Mexican Seasoning
  • 3 tbsp Butter
  • 2 Cups Shredded Cheese Blend
  • Sour Cream (for topping)
  • 1 Box Cheesy Mexican Rice (for side)

Instructions

Step 1: Preheat your oven to 385 degrees. While the oven is warming up, season the chicken breasts with black pepper, seasoned salt, and Mexican seasoning.

Step 2: Bake the chicken breasts for 25 minutes or until fully cooked.

Step 3: Once cooked, shred the chicken and place it in a large bowl. Chop up the onion, green and red bell peppers, and add them to the bowl as well.

Step 4: Next, add the beans, corn, and shredded cheese into the bowl and mix everything together. Set your mixture to the side.

Step 5: On a sheet pan, take 6 tortillas and place them overlapping around the perimeter of the pan so that half of the tortillas overhang the rim, with one additional tortilla layered in the center so that the entire bottom surface of the pan is covered.

Step 6: Evenly spread out the chicken mixture onto the tortillas, and top with more shredded cheese.

Step 7: Place the final tortilla in the middle of the pan and fold each overhanging tortilla towards the center.

Step 8: Lightly brush melted butter on the top of the tortillas. The butter will act as a glue to keep them from unfolding. After this, place the pan back in the oven for 15 minutes or until lightly toasted.

Step 9: Take it out of the oven and cut into slices. You can top with sour cream, a sprinkle of cheese. Serve with rice or your favorite sides. Enjoy!
