
As the day winds down and your evening approaches, your time for preparing dinner may feel incredibly limited. Between all the kids’ after-school activities, sports, and homework, you’re being pulled in so many different directions some days. This is why I love an easy crockpot dinner recipe! You can set it earlier in the day when things are a little less busy, and you can come back to a finished dinner after all the running around! This Marry Me Chicken recipe is one of my favorites to make. I’ve adapted it to my family’s likes, and they leave their plates clean every single time!
Ingredients
- 3 Boneless Chicken Breasts
- 1 Jar of Sundried Tomatoes
- Salt, to taste
- Pepper, to taste
- 1 Teaspoon Garlic Powder
- 2 Tablespoons Butter
- 4 Cloves Garlic, Minced
- 1 Cup Heavy Cream
- 1/2 Cup Grated Parmesan cheese
- 1/2 Teaspoon Chili Flakes (optional)
- 1/2 Teaspoon Dried Oregano
- 1/2 Teaspoon Dried Thyme
- 2 Cups Fresh Spinach Leaves
- 1/4 Cup Shredded Parmesan cheese
- 2 Cups Cooked Rice (for serving)
Instructions
Step 1: Season the chicken breasts with salt, pepper, and garlic powder on both sides.
Step 2 Place the seasoned chicken breasts in the crockpot and cook about 3-4 minutes per side. Add the chopped sun-dried tomatoes on top.
Step 3: In a large skillet over medium-high heat, add minced garlic and cook for 1-2 minutes.
Step 4: Lower the heat to medium and pour in the heavy cream. Stir in the grated Parmesan cheese until it’s melted and the sauce thickens slightly. Add chili flakes (if using), dried oregano, and dried thyme. Let the sauce simmer for 2-3 minutes.
Step 5: Pour the prepared sauce over the chicken and sun-dried tomatoes. Stir to coat evenly.
Step 6: Cover the slow cooker and cook on low for 3-4 hours or on high for 1-2 hours until the chicken is cooked through and tender.
Step 7: Once the chicken is cooked, remove it and add your spinach to the mixture and stir until the spinach wilts slightly.
Step 8: Shred the chicken and add it back into the slow cooker.
Step 9: While the chicken is cooking, prepare the rice according to package instructions.
Step 10: Serve the creamy chicken over cooked rice, garnished with shredded Parmesan cheese. Enjoy your delicious meal!
