The new school year is here, and our schedules are about to be busier than ever! This year, I have a junior in high school, a 5th grader, a 1st grader, a preschooler, and a toddler in the 2s class. Between pickups, sports practices, tutoring, and football games, our afternoons are about to be jam-packed! I need dinner recipes that are quick and easy to make, and have plenty of leftovers for meal prep during the week. This mini chicken pot pie recipe is just that, and the kids loved them! Here’s how I made them:
Ingredients
2 cups frozen mixed vegetables (thawed)
1 rotisserie chicken
1 can condensed cream of chicken soup
1 tube Pillsbury Grands biscuits
Black pepper, onion powder, thyme, and garlic powder
Instructions
Step 1: Preheat the oven to 375°F. Grab a 6-slot muffin tin and give it a good spray with cooking oil.
Step 2: To save time, I grabbed a rotisserie chicken from the store (best decision ever!), but feel free to cook your own if you prefer! Typically, 3 large chicken breasts feeds my family of 7. Shred the chicken and toss it in a bowl with the thawed vegetables and cream of chicken soup. I like to add a splash of milk to make it a bit creamier.
Step 3: Season the chicken mixture with black pepper, onion powder, thyme, and garlic powder. Give it a taste test and adjust as needed.
Step 4: Pop open that tube of biscuits. Separate them and, using a roller or your hands, flatten each biscuit. Stretch and place each flattened biscuit into an individual muffin tin slot, making little dough cups.
Step 5: Fill each biscuit cup with a spoonful of the chicken mixture. You can add more or less depending on how stuffed you want them. Pull the dough ends up towards the center to enclose the filling.
Step 6: Pop the muffin tin into the oven and bake for 20-22 minutes, or until the mini pot pies are golden brown and delicious. Let them rest for about 5 minutes before serving, if you can wait that long!
These mini pot pies were a hit! I had to make a couple of pans since we are 7, but this recipe made enough for a great dinner and leftovers for the next day. I’ll definitely be making this again. Let me know in the comments if you try it out!
